The soybean is a unique plant because it produces the largest quantity of proteins with favourable amino acid structure that is rich in vitamins in only three to five months of growth. It allows diverse possibilities of processing: ranging from sauces to flour, flakes, small pieces and larger chunks.

Use it as an excellent substitute in minced meat dishes such as stuffed peppers, patties and moussaka. Leave the chunks soaked in hot water to rise and then use them for the preparation of delicious dishes that are a delight to non-vegetarians as well.
