Another name for green soybeans is green mung beans. It is an easily digestible and nutritionally rich foodstuff full of proteins, vitamins (A, B1, B2, C, E, and niacin) and minerals. The green soybeans is an indispensable ingredient in Chinese and other Oriental cuisines. Ground into flour it is also used for desserts, bread and Chinese pasta.
